This lobster roll sandwich offers a flavorful and healthy twist on an easy lobster roll recipe. With creamy Greek yogurt, fresh lobster, and whole-wheat buns, it’s a wholesome summer delight.
1poundcooked lobster meat or cooked shrimp, cut into 1/3-inch pieces (about 2 1/2 cups)

4whole-wheat hot dog buns
1tablespoonextra-virgin olive oil
Instructions
If using regular yogurt, line a strainer with paper towels and place over a bowl. Add yogurt to the strainer and let it drain for 20 minutes to thicken.
In a medium bowl, combine the thickened yogurt or Greek yogurt with mayonnaise, celery, scallions, and fresh lemon juice. Stir until smooth.
Fold the lobster meat into the yogurt mixture, ensuring everything is evenly coated. Season with salt and freshly ground pepper to taste, then chill the mixture until ready to serve.
Preheat a grill pan over medium-high heat. While the pan heats, brush the insides of the hot dog buns with olive oil.
