Ingredients
  

  • 1/2 cup nonfat plain Greek-style yogurt or 2/3 cup regular, plain nonfat yogurt
  • 3 tablespoons mayonnaise
  • 1 stalk celery, finely chopped
  • 1 tablespoon chopped scallion greens (about 1 scallion)
  • 1 tablespoon fresh lemon juice
  • 1 pound cooked lobster meat or cooked shrimp, cut into 1/3-inch pieces (about 2 1/2 cups)
  • Salt and freshly ground black pepper
  • 4 whole-wheat hot dog buns
  • 1 tablespoon extra-virgin olive oil

Instructions
 

  • If using regular yogurt, line a strainer with paper towels and place over a bowl. Add yogurt to the strainer and let it drain for 20 minutes to thicken.
  • In a medium bowl, combine the thickened yogurt or Greek yogurt with mayonnaise, celery, scallions, and fresh lemon juice. Stir until smooth.
  • Fold the lobster meat into the yogurt mixture, ensuring everything is evenly coated. Season with salt and freshly ground pepper to taste, then chill the mixture until ready to serve.
  • Preheat a grill pan over medium-high heat. While the pan heats, brush the insides of the hot dog buns with olive oil.
  • Grill the buns, cut side down, for about 3 minutes or until they’re golden brown and crispy.
  • Scoop about 3/4 cup of the lobster filling into each toasted bun. Serve immediately and enjoy!

Notes

To customize, replace buns with lettuce wraps for low-carb or gluten-free options; swap lobster with shrimp for a budget-friendly version.
