Base Recipe: Rinse the soaked oat groats and place them in a blender. Add the 4 cups of water and a pinch of salt, then blend until coarsely processed. Transfer to a medium pot and bring to a boil, whisking frequently.
Reduce heat to low, cover, and let simmer for 30 minutes, stirring occasionally, until the porridge thickens and the groats are tender. Serve immediately or prepare one of the variations below.
Butternut Squash & Ginger Variation: While cooking the oat porridge, add the cubed butternut squash, grated ginger, and garlic to the pot. Stir and continue cooking until both the squash and porridge are creamy.
When done, season with tamari and garnish with scallions, toasted pepitas, parsley, and a drizzle of sesame oil for added depth of flavor.
Miso & Avocado Variation: Once the base porridge is cooked, turn off the heat and stir the miso paste directly into the hot mixture until it fully dissolves. If needed, stir over low heat to thicken further.
Top with sliced avocado, tamari, scallions, sesame seeds, and microgreens for a savory, nutrient-dense breakfast bowl.
