- 1 cup almond flour (or almond meal)
- 3 tablespoons pumpkin puree
- 3 tablespoons maple syrup
- 1 teaspoon pumpkin spice (optional)
- ½ cup unrefined sugar
- 1-2 teaspoons pumpkin spice
- 2 tablespoons maple syrup (for optional coating)
Preheat your oven to 350°F (180°C). Line a mini muffin pan or baking sheet with parchment paper and lightly grease it with cooking spray.
In a mixing bowl, combine almond flour, pumpkin puree, maple syrup, and pumpkin spice (if using). Mix until a sticky, firm dough forms.
Roll the dough into small, bite-sized balls and arrange them evenly on your prepared pan.
Bake for 12-14 minutes at 350°F, just until the edges of the bites turn golden and feel dry to the touch.
Let the bites cool on the pan for about 5 minutes, then carefully transfer them to a cooling rack to finish setting up. They’ll firm up as they cool!
If you’d like to add a sweet, spiced coating, stir together unrefined sugar and pumpkin spice in a small bowl. Lightly brush the bites with maple syrup, then roll them in the sugar mixture until evenly coated.
