Healthy Strawberry Crostini Recipe

Ingredients
  

  • 1 cup strawberries, diced
  • 1 teaspoon granulated sugar
  • ½ teaspoon lemon zest
  • ½ baguette cut into ¼-inch thick slices
  • Olive oil spray
  • ½ cup low-fat ricotta cheese
  • 2 teaspoons honey
  • 1 teaspoon chopped mint

Instructions
 

  • Preheat your oven to 400°F and line a baking sheet with parchment paper.
  • In a bowl, toss the diced strawberries with sugar and lemon zest. Cover and let sit at room temperature while you prepare the crostini.
  • Place the baguette slices on the prepared baking sheet and lightly spray both sides with olive oil spray.
  • Bake the slices for 8-10 minutes until they’re lightly golden and crisp. Let cool for 5-10 minutes once out of the oven.
  • In a separate small bowl, mix the ricotta with honey until smooth and creamy.
  • Just before assembling, stir the chopped mint into the strawberry mixture.
  • Spread a light layer of the ricotta mixture onto each toasted baguette slice.
  • Top with the strawberry mixture, dividing it evenly among the crostini. Serve immediately for the best texture and flavor.

Notes

Store the components separately if preparing ahead to ensure freshness. Macerate the strawberries for at least 15 minutes to enhance their natural sweetness.
