1poundchicken breast cutlets, 1/2-inch thick (about 5-6 cutlets)
16-ounce packagebaby arugula
1cupcherry tomatoes, halved
1cupfresh mozzarella pearls
1/2cupfresh basil leaves, thinly sliced

Red wine vinegar or balsamic vinegar

Instructions
Add 1 tablespoon of olive oil and the garlic clove to a small microwave-safe dish. Microwave for 15 seconds to infuse the oil, then discard the garlic.
