  • 4 large eggs beaten
  • 1 cup sliced fresh mushrooms
  • 1/2 cup chopped fresh broccoli
  • 1/4 cup shredded sharp cheddar cheese
  • 2 tablespoons finely chopped onion
  • 2 tablespoons finely chopped green pepper
  • 2 tablespoons grated Parmesan cheese
  • 1/8 teaspoon salt
  • Dash pepper

Instructions
 

  • Preheat your oven to 350°F. Lightly grease a shallow 3-cup baking dish to ensure your frittata doesn’t stick.
  • In a large mixing bowl, whisk together the eggs, salt, and pepper until fully combined. Stir in the mushrooms, broccoli, onion, and green pepper.
  • Fold in the cheddar cheese and Parmesan until evenly distributed throughout the mixture.
  • Pour the mixture into the prepared baking dish, smoothing the top with a spatula for even cooking.
  • Bake, uncovered, for 20-25 minutes, or until a knife inserted into the center comes out clean. You’ll know it’s ready when the top is golden and lightly puffed.
  • Remove from the oven and let it rest for 5 minutes before slicing and serving. Enjoy warm with a side of fresh fruit or a crisp salad.
