Ingredients
  

  • 4 cups fresh arugula
  • 1 can (15 ounces) no-salt-added cannellini beans, rinsed and drained
  • 1 cup grape tomatoes, halved
  • 1/2 small red onion, thinly sliced
  • 1/3 cup chopped roasted sweet red peppers
  • 1/3 cup pitted Nicoise or other olives
  • 1/4 cup chopped fresh basil
  • 3 tablespoons extra virgin olive oil
  • 1/2 teaspoon grated lemon zest
  • 2 tablespoons lemon juice
  • 1 clove garlic, minced
  • 1/8 teaspoon salt
  • 2 cans (5 ounces each) albacore white tuna in water, drained

Instructions
 

  • In a large salad bowl, combine arugula, cannellini beans, grape tomatoes, red onion, roasted sweet red peppers, olives, and fresh basil. Gently toss to mix.
  • In a small bowl, whisk together olive oil, grated lemon zest, lemon juice, minced garlic, and salt to create the dressing.
  • Drizzle the dressing over the salad mixture, ensuring everything is lightly coated.
  • Add the drained albacore tuna and gently toss again, being careful not to break up the tuna chunks too much.
  • Serve immediately, or chill for 15-20 minutes to allow the flavors to meld together.

Notes

Let the salad sit in the fridge for 15 minutes to enhance flavor. Store leftovers in an airtight container up to 3 days. Keep dressing separate to avoid sogginess.
