High-Protein Crepes

These high-protein crepes are an easy, nutritious recipe packed with protein from cottage cheese and egg whites. Perfect as healthy crepes with cottage cheese or crepes without flour!

Ingredients
  

  • 2 large eggs
  • 1 cup egg whites
  • 1/2 cup cottage cheese (2% or 4% works best)
  • 1/4 cup oat flour
  • 1 teaspoon vanilla extract (optional)

Instructions
 

  • Add eggs, egg whites, cottage cheese, oat flour, and vanilla extract (if using) to a blender. Blend until completely smooth to create a silky, lump-free batter.
  • Let the batter rest for 5 minutes to allow bubbles to settle—this ensures even cooking.
  • Heat an 8-inch nonstick skillet over medium heat. Lightly grease with cooking spray or a small amount of butter.
  • Pour about 1/4 cup of the batter into the skillet, swirling quickly to coat the pan evenly. Cook for about 1 minute, or until the edges lift easily, and the bottom is golden.
  • Flip and cook the other side for an additional 30 seconds to 1 minute, until golden and cooked through.
  • Repeat with the remaining batter, stacking crepes on a plate and covering them loosely with foil to keep warm.
  • Serve immediately with your favorite toppings like fresh fruit and yogurt, or let cool completely before storing for meal prep.

Meal prep tip: Store crepes in an airtight container, layered with parchment paper, in the refrigerator for up to 4 days or freeze for up to 1 month.
