These high-protein crepes are an easy, nutritious recipe packed with protein from cottage cheese and egg whites. Perfect as healthy crepes with cottage cheese or crepes without flour!
Add eggs, egg whites, cottage cheese, oat flour, and vanilla extract (if using) to a blender. Blend until completely smooth to create a silky, lump-free batter.
Let the batter rest for 5 minutes to allow bubbles to settle—this ensures even cooking.
Heat an 8-inch nonstick skillet over medium heat. Lightly grease with cooking spray or a small amount of butter.
Pour about 1/4 cup of the batter into the skillet, swirling quickly to coat the pan evenly. Cook for about 1 minute, or until the edges lift easily, and the bottom is golden.
Flip and cook the other side for an additional 30 seconds to 1 minute, until golden and cooked through.
Repeat with the remaining batter, stacking crepes on a plate and covering them loosely with foil to keep warm.
