Ingredients
  

  • ½ cup unsweetened almond milk, plain or vanilla (more if needed)
  • ¼ cup plain or vanilla Greek yogurt (use coconut yogurt to keep it vegan)
  • ½ cup old-fashioned rolled oats, gluten-free certified
  • 1 scoop vanilla or unflavored protein powder (whey or pea-based)
  • ½ tablespoon chia seeds
  • ½ teaspoon vanilla extract
  • ½ overripe banana mashed
  • 1 teaspoon cinnamon
  • Sliced banana for topping
  • Optional toppings: diced apple, pumpkin puree, pecans, peanut butter, shredded coconut, diced peach, fresh strawberries, etc.

Instructions
 

  • Set out a mason jar or small container with a secure lid.
  • Add the base ingredients: almond milk, Greek yogurt, rolled oats, protein powder, chia seeds, vanilla extract, mashed banana, and cinnamon. Stir until well combined.
  • If using a specific flavor option, mix in the corresponding ingredients now (e.g., pumpkin puree, diced apple, or peanut butter).
  • Seal the container and place it in the refrigerator overnight or for at least 6 hours.
  • In the morning, give it a good stir, adjust the consistency with a splash of almond milk if needed, and add your favorite toppings. Enjoy chilled!
