Servings 12 medium/large almond butter cups

Ingredients

  • 3/4 cup melted coconut oil
  • 1/2 cup cocoa powder (more or less to taste)
  • 2-4 tablespoons natural sweetener (such as agave or maple syrup, to taste)
  • Pinch salt
  • 3/4 cup almond butter (or any nut butter)
  • Sea salt for topping

Instructions

  • Whisk together melted coconut oil, cocoa powder, sweetener, and a pinch of salt until smooth.
  • Prepare a muffin tin with 12 paper liners.
  • Pour 1-2 tablespoons of the cocoa mixture into each lined muffin cup to create the bottom layer.
  • Add a small spoonful (about 2-3 teaspoons) of almond butter to the center of each cup.
  • Divide the remaining cocoa mixture evenly among the cups, covering the almond butter.
  • Gently press down the almond butter if it sticks up, to create a smooth top layer.
  • Sprinkle a pinch of coarse sea salt over each cup for a finishing touch.
  • Place the muffin tin in the freezer for one hour, or until the cups are solid.
