Servings 12 medium/large almond butter cups
- 3/4 cup melted coconut oil
- 1/2 cup cocoa powder (more or less to taste)
- 2-4 tablespoons natural sweetener (such as agave or maple syrup, to taste)
- Pinch salt
- 3/4 cup almond butter (or any nut butter)
- Sea salt for topping
Whisk together melted coconut oil, cocoa powder, sweetener, and a pinch of salt until smooth.
Prepare a muffin tin with 12 paper liners.
Pour 1-2 tablespoons of the cocoa mixture into each lined muffin cup to create the bottom layer.
Add a small spoonful (about 2-3 teaspoons) of almond butter to the center of each cup.
Divide the remaining cocoa mixture evenly among the cups, covering the almond butter.
Gently press down the almond butter if it sticks up, to create a smooth top layer.
Sprinkle a pinch of coarse sea salt over each cup for a finishing touch.
Place the muffin tin in the freezer for one hour, or until the cups are solid.
