This homemade blueberry frozen yogurt is a refreshing and healthy treat combining juicy blueberries, creamy yogurt, and natural sweetness. It's low in sugar, gluten-free, and perfect for all dietary needs.
Combine the blueberries, monk fruit sweetener, and water in a medium saucepan over medium-low heat.
Simmer for 6–8 minutes, stirring occasionally, until the berries release their juice and soften.
Cool the mixture, blend until smooth, and strain through a mesh strainer into a bowl. Discard the pulp.
Stir in the agave syrup and yogurt until smooth. Pour into an empty Ninja Creami pint container.
Freeze flat for 24 hours.
Remove, assemble into the Ninja Creami machine, and select “Lite Ice Cream.”
If crumbly, re-spin the mixture to achieve creaminess.
Serve immediately for the best texture!
