Instructions
Preheat your oven to 350°F and line two baking sheets with parchment paper or silicone mats.
In a large bowl, whisk together the wheat bran, whole wheat flour, ground flaxseed, baking powder, and salt.
In a separate bowl, mix together the water, maple syrup, and non-dairy milk.
Pour the wet ingredients into the dry ingredients, stirring until a sticky dough forms.
Divide the dough in half, placing each portion onto a separate prepared baking sheet.
Using wax paper, roll the dough out as thin as possible. Remove the wax paper carefully once done.
Bake both sheets for 10-15 minutes, or until lightly browned.
Remove from the oven and let cool completely, then reduce oven heat to 275°F.
Break the cooled bran sheets into small flakes and spread them out onto one baking sheet.
Bake the flakes at 275°F for another 15-20 minutes, stirring every 5 minutes, until crisp and golden.
Cool completely before storing in an airtight container. Serve with your favorite non-dairy milk and fresh fruit!
Notes
Roll the dough as thin as possible for better crunch, and stir flakes during second bake for even crisping.
