Ingredients
  

  • 1 cup wheat bran
  • 1 cup whole wheat flour
  • 2 tablespoons ground flaxseed
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • ½ cup water
  • 3 tablespoons maple syrup
  • ¼ cup non-dairy milk

Instructions
 

  • Preheat your oven to 350°F and line two baking sheets with parchment paper or silicone mats.
  • In a large bowl, whisk together the wheat bran, whole wheat flour, ground flaxseed, baking powder, and salt.
  • In a separate bowl, mix together the water, maple syrup, and non-dairy milk.
  • Pour the wet ingredients into the dry ingredients, stirring until a sticky dough forms.
  • Divide the dough in half, placing each portion onto a separate prepared baking sheet.
  • Using wax paper, roll the dough out as thin as possible. Remove the wax paper carefully once done.
  • Bake both sheets for 10-15 minutes, or until lightly browned.
  • Remove from the oven and let cool completely, then reduce oven heat to 275°F.
  • Break the cooled bran sheets into small flakes and spread them out onto one baking sheet.
  • Bake the flakes at 275°F for another 15-20 minutes, stirring every 5 minutes, until crisp and golden.
  • Cool completely before storing in an airtight container. Serve with your favorite non-dairy milk and fresh fruit!

Notes

Roll the dough as thin as possible for better crunch, and stir flakes during second bake for even crisping.
