Ingredients

  • 2 cups almond flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon sea salt
  • 1/4 cup coconut oil, melted
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 cup dark chocolate chips

Instructions

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large mixing bowl, whisk together the almond flour, baking soda, and sea salt.
  • In a separate bowl, mix the melted coconut oil, maple syrup, and vanilla extract until well combined.
  • Pour the wet ingredients into the dry ingredients, stirring until a cohesive dough forms. Fold in the dark chocolate chips.
  • Scoop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them about 2 inches apart to allow for spreading.
  • Bake for 10-12 minutes, or until the edges are golden brown. The centers will still look slightly undercooked—this gives them that soft and chewy texture.
  • Remove the cookies from the oven and allow them to cool on the baking sheet for 5 minutes before transferring them to a wire rack.
