- 1 lb medium russet potatoes, washed
- 2 tsp vinegar
- 1 tbsp olive oil

Using a mandolin slicer, thinly slice your potatoes to about 1/16-inch thickness for even cooking.
Place the slices in a large bowl and cover with cold water. Add the vinegar to the water and refrigerate the bowl for 30 minutes. This step removes starch for crunchier chips.
Preheat your air fryer to 325°F while the potato slices are soaking.
Drain the potatoes and rinse them under cold water until the water runs clear, ensuring the starch is fully removed. Pat them completely dry with a clean kitchen towel.
Transfer the dry potato slices to a large bowl and toss with olive oil. Sprinkle with salt (unless you're salting after cooking, as noted in the tips below).
Lay the slices in the air fryer basket in two overlapping layers. Avoid overcrowding as it can prevent even cooking.
Air fry the potatoes for 10-15 minutes, flipping every 2-2.5 minutes to ensure even browning. Look for chips that have achieved a light golden color.
Remove each chip as soon as it's crispy and golden brown. Repeat with remaining batches as needed. Allow the chips to cool slightly for the perfect crunch.
