Ingredients
  

  • 1 lb medium russet potatoes, washed
  • 2 tsp vinegar
  • 1 tbsp olive oil
  • Salt for sprinkling

  • Using a mandolin slicer, thinly slice your potatoes to about 1/16-inch thickness for even cooking.
  • Place the slices in a large bowl and cover with cold water. Add the vinegar to the water and refrigerate the bowl for 30 minutes. This step removes starch for crunchier chips.
  • Preheat your air fryer to 325°F while the potato slices are soaking.
  • Drain the potatoes and rinse them under cold water until the water runs clear, ensuring the starch is fully removed. Pat them completely dry with a clean kitchen towel.
  • Transfer the dry potato slices to a large bowl and toss with olive oil. Sprinkle with salt (unless you're salting after cooking, as noted in the tips below).
  • Lay the slices in the air fryer basket in two overlapping layers. Avoid overcrowding as it can prevent even cooking.
  • Air fry the potatoes for 10-15 minutes, flipping every 2-2.5 minutes to ensure even browning. Look for chips that have achieved a light golden color.
  • Remove each chip as soon as it's crispy and golden brown. Repeat with remaining batches as needed. Allow the chips to cool slightly for the perfect crunch.
