Homemade Granola Bars

These homemade granola bars are packed with protein and fiber, making them the best granola bar recipe for a satisfying snack. With just a few ingredients, they're healthy granola bars with peanut butter that the whole family will love!

Equipment

  • 8x8 baking pan
  • Parchment paper
  • Large bowl
  • Measuring cup

Ingredients
  

  • 1 cup very smooth creamy natural peanut butter, or cashew butter
  • cup honey
  • 1 teaspoon vanilla extract
  • Heaping ½ teaspoon sea salt
  • cups whole rolled oats
  • cup mini chocolate chips*
  • 3 tablespoons pepitas, or crushed peanuts or cashews

Instructions
 

  • Line an 8x8 baking pan with parchment paper.
  • In a large bowl, stir together the peanut butter, honey, vanilla, and salt until smooth.
  • Add the oats, chocolate chips, and pepitas (or nuts). Stir thoroughly until the mixture comes together.
  • Transfer the mixture to the prepared pan, pressing it down firmly with another sheet of parchment paper. Use the back of a measuring cup to flatten evenly.
  • Chill in the refrigerator for at least 1 hour before slicing into bars.
  • Store bars in the fridge for optimal texture and freshness.

Notes

*Note: If mini chocolate chips aren’t available, chop larger chips into smaller pieces for better consistency.
