Honey Almond Overnight Oats

These honey almond overnight oats combine creamy oats, nutty almonds, and natural sweetness for a gluten-free, make-ahead breakfast. Perfect for busy mornings or meal prep!

Ingredients
  

  • 1/3 cup rolled oats (gluten-free, if needed)
  • 2 tsp. chia seeds
  • Pinch of salt
  • 2 tsp. honey (or sub maple syrup or agave)
  • 1/2–3/4 cup almond milk (or cashew, oat, or coconut milk)
  • 2 Tbsp. sliced or chopped almonds
  • 1–2 drops almond extract or vanilla extract (optional)

Instructions
 

  • In a small bowl or jar, combine oats, chia seeds, salt, honey, 1/2 cup almond milk, 1 tablespoon almonds, and almond extract if using. Stir until well mixed.
  • Taste the mixture and adjust flavors, adding more honey, almond extract, or milk to reach your preferred sweetness and consistency.
  • Transfer to a jar or container with a lid, then refrigerate for at least 30 minutes (or overnight for the creamiest results).
  • When ready to serve, give the oats a stir and add a splash of almond milk if the mixture has thickened too much.
  • Top with the remaining almonds and any other favorite toppings, such as fresh fruit, coconut flakes, or a drizzle of nut butter. Enjoy!
