Ingredients
  

  • 2 pounds medium carrots peeled and cut crosswise into 2-inch pieces; halve or quarter pieces if thicker than 1 inch
  • 3 cloves garlic minced
  • 3 tablespoons unsalted butter
  • 1 1/2 tablespoons honey
  • 1 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • Juice from 1/2 small lemon
  • Chopped fresh parsley for garnish (optional)

Instructions
 

  • Preheat your oven to 425°F and arrange a rack in the middle position.
  • Place the peeled and chopped carrots on a large, rimmed baking sheet in a single layer for even roasting.
  • In a small saucepan, melt the butter over medium heat. Add the minced garlic and let it cook until fragrant, about 30 seconds, swirling occasionally.
  • Remove the saucepan from heat and whisk in the honey. Drizzle half of this glaze over the carrots. Toss to coat, ensuring every piece is well-seasoned.
  • Sprinkle the carrots with salt and pepper, then toss again to distribute the seasonings evenly.
  • Roast in the oven for 15 minutes. Remove the pan, stir the carrots to promote even browning, then return to roast for another 15-20 minutes or until tender and caramelized.
  • Drizzle the remaining glaze over the carrots, followed by a squeeze of fresh lemon juice. Toss to combine, then transfer to a serving dish.
  • Garnish with fresh parsley if desired, and serve warm.
