Ingredients
  

  • 1 pound beef sirloin cut into thin strips
  • 2 tablespoons olive oil
  • 1 medium onion chopped
  • 3 cloves garlic minced
  • 8 ounces mushrooms sliced
  • 1 cup beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Dijon mustard
  • 1 cup sour cream
  • Salt and pepper to taste
  • 2 tablespoons fresh parsley chopped

Instructions
 

  • In a large skillet, heat olive oil over medium heat.
  • Add the beef strips and cook until browned, about 3-4 minutes per side. Remove from skillet and set aside.
  • In the same skillet, add onion and garlic, and sauté until the onion turns translucent, about 4-5 minutes.
  • Add mushrooms and cook until tender, stirring occasionally, around 5 minutes.
  • Return the beef to the skillet.
  • Stir in beef broth, Worcestershire sauce, and Dijon mustard. Bring to a low simmer and cook for 10 minutes, letting the flavors meld together.
  • Reduce heat to low and gently stir in the sour cream until the sauce turns silky and thick. Season with salt and pepper to taste.
  • Sprinkle fresh parsley over the top before serving for a burst of freshness.
