Ingredients

  • 1 cup lemon juice
  • 1 1/2 cup water
  • 1 cup sugar (or granulated erythritol)
  • 1 tbsp lemon zest

Instructions

  • Prepare your ice cream maker based on the manufacturer’s instructions. If you don’t have an ice cream maker, see our tips below for an alternative method.
  • In a medium saucepan, combine the water and sugar (or erythritol). Heat over medium heat, stirring until the sweetener is fully dissolved. Remove from heat, let it cool, and then refrigerate until cold.
  • Mix the chilled sugar-water, lemon juice, lemon zest, and vodka (if using). Pour the mixture into your prepared ice cream maker.
  • Churn the mixture for approximately 15 minutes, or until it reaches a slushy consistency.
  • Optionally, transfer the mixture to a freezer-safe container. Freeze for an hour, then stir to achieve a thicker texture. Repeat until your sorbet reaches your desired consistency.
  • Serve in bowls or cones using an ice cream scoop. Enjoy immediately or store in the freezer for up to a week.
