  • 2 small to medium zucchini, sliced into 1/8"-thick rounds
  • 1/2 teaspoon kosher salt
  • Cooking spray
  • 1/2 teaspoon (or more) ranch seasoning

  • Prep the zucchini: Place zucchini slices in a colander over a bowl. Sprinkle with salt, toss, and let sit for 30 minutes to draw out excess moisture.
  • Dry the slices: Discard the liquid, then pat zucchini dry with paper towels to remove as much moisture as possible.
  • Oven method: Preheat the oven to 225°F. Lightly grease a large baking sheet with cooking spray. Arrange zucchini slices in a single layer and bake for 1 hour 15 minutes, flipping at the 1-hour mark, until chips are browned and crispy.
  • Air fryer method: Grease the air fryer basket and layer zucchini slices, working in batches. Cook at 350°F for 4 minutes, flip, and cook an additional 4 minutes, or until crispy.
  • Season: While still warm, transfer chips to a large bowl and toss with ranch seasoning to coat evenly. Adjust seasoning to taste and enjoy!
