Ingredients

  • 4 boneless skinless chicken breasts
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup sun-dried tomatoes chopped (preferably packed in oil, drained)
  • 2 cloves garlic minced
  • 1 teaspoon dried Italian seasoning
  • 1 teaspoon smoked paprika
  • 1 teaspoon red pepper flakes optional, for a little heat
  • 3 cups fresh spinach leaves
  • Salt and pepper to taste
  • 2 tablespoons olive oil or butter
  • Fresh basil or parsley for garnish optional

Instructions

Season the Chicken

  • Generously season the chicken breasts with salt, pepper, smoked paprika, and Italian seasoning. These spices will build a flavorful base for your dish.

Sear the Chicken

  • Heat olive oil or butter in a skillet over medium-high heat. Sear the chicken breasts for 2-3 minutes on each side until golden brown. This step is optional but adds a lovely depth of flavor.

Transfer to the Crockpot

  • Place the seared chicken breasts in the crockpot, arranging them in a single layer if possible.

Mix the Sauce

  • In a mixing bowl, whisk together the heavy cream, chicken broth, Parmesan cheese, minced garlic, and sun-dried tomatoes until smooth.

Pour Over the Chicken

  • Carefully pour the creamy sauce over the chicken in the crockpot, making sure each piece is well coated.

Cook Low and Slow

  • Cover and cook on low for 4-6 hours or on high for 2-3 hours. The chicken will become tender and soak up all the delicious flavors.

Add the Spinach

  • About 15 minutes before serving, stir in the fresh spinach. It will wilt beautifully, adding color and nutrients to the dish.

Adjust and Taste

  • Taste the sauce and adjust the seasoning with more salt and pepper if needed.

Serve and Garnish

  • Serve hot, garnished with fresh basil or parsley if desired. This dish is wonderful over cauliflower rice or alongside steamed veggies.

Notes

Simply Nourished Life’s Cooking Tips

For an extra burst of flavor, use sun-dried tomatoes packed in oil and drain them before chopping.
If you prefer a thicker sauce, stir in a teaspoon of xanthan gum toward the end of the cooking time.
Short on time? Skip the searing step—your crockpot will still work its magic!

Variations, Leftovers & Storage

This recipe is highly versatile. You can swap chicken breasts for thighs if you prefer dark meat. Want to make it dairy-free? Use coconut cream and nutritional yeast instead of heavy cream and Parmesan.
Leftovers can be stored in an airtight container in the fridge for up to 3 days. To reheat, warm gently on the stove or in the microwave, adding a splash of broth if needed to loosen the sauce.
