Ingredients
  

  • 1 pound ground beef 85% lean for the best balance of flavor and texture
  • 1 egg
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic minced
  • 1 teaspoon onion powder
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons unsalted butter
  • 2 additional cloves garlic minced (for the sauce)
  • 2 tablespoons chopped fresh parsley plus more for garnish

Instructions
 

Mix the Meatball Ingredients

  • In a large bowl, combine the ground beef, egg, Parmesan cheese, garlic, onion powder, Italian seasoning, salt, and pepper. Mix gently with your hands until just combined. Avoid overmixing to keep the meatballs tender.

Shape the Meatballs

  • Roll the mixture into 1-inch meatballs (about 18–20 total). Place them on a plate or parchment-lined tray while you heat the skillet.

Cook the Meatballs

  • Heat a large skillet over medium heat and melt 1 tablespoon of butter. Add the meatballs in a single layer, working in batches if needed. Cook for 4–5 minutes per side until browned and cooked through. Transfer cooked meatballs to a plate and keep warm.

Prepare the Garlic Butter Sauce

  • In the same skillet, add the remaining tablespoon of butter and the minced garlic. Cook for 1–2 minutes until fragrant, stirring frequently.

Combine and Serve

  • Return the meatballs to the skillet and toss them gently in the garlic butter sauce. Sprinkle with fresh parsley for a pop of color and extra flavor. Serve warm and enjoy!
