Ingredients
  

  • 1 pound ground beef
  • 1 medium onion chopped
  • 1 package 8 ounces cream cheese, cubed and softened
  • 2 garlic cloves minced
  • 3/4 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon paprika
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon pepper
  • 1 can 14.5 ounces beef broth
  • 1 can 10 ounces diced tomatoes and green chiles
  • 1/2 cup heavy whipping cream
  • Optional toppings: shredded cheddar cheese sliced avocado, chopped fresh cilantro

Instructions
 

Brown the beef and onion

  • In a large saucepan over medium heat, cook the ground beef and chopped onion for 6–8 minutes, breaking the meat into crumbles. Cook until the beef is no longer pink, then drain any excess grease.

Add the cream cheese and spices

  • Stir in the softened cream cheese, minced garlic, chili powder, salt, paprika, cumin, oregano, and pepper. Stir until the cream cheese is fully melted and everything is well blended.

Add the broth and tomatoes

  • Pour in the beef broth and the can of diced tomatoes with green chiles. Stir to combine, then bring the soup to a gentle boil over medium heat.

Simmer to thicken

  • Reduce the heat to low and let the soup simmer uncovered for 7–10 minutes, allowing the flavors to meld and the soup to slightly thicken.

Stir in the heavy cream

  • Finally, reduce the heat to low and stir in the heavy whipping cream. Heat through without boiling. Serve immediately with your favorite toppings, if desired.
