Lemon Apricot Popsicles

These lemon apricot popsicles combine the sweet tang of apricots with zesty lemon for a refreshing, low-calorie summer treat. Perfect for a healthy snack or dessert!

Ingredients
  

  • 1/4 cup orange juice
  • 1 teaspoon grated lemon zest
  • 1/4 cup lemon juice
  • 4 teaspoons sugar
  • 1 cup sliced fresh apricots (4-5 medium)
  • 1/2 cup ice cubes
  • 1 teaspoon minced fresh mint, optional
  • 6 freezer pop pouches, molds or 6 paper cups (3-ounce size) and wooden pop sticks

Instructions
 

  • Combine orange juice, lemon zest, lemon juice, sugar, apricots, and ice cubes in a blender. Cover and process until smooth.
  • If desired, stir in the minced fresh mint for an extra layer of flavor.
  • Pour the mixture into freezer pop molds or small paper cups. If using cups, cover with foil and insert wooden sticks through the foil.
  • Place in the freezer and freeze until firm, about 4-6 hours or overnight for best results.

Notes
