Ingredients
  

  • 2 lbs boneless, skinless chicken thighs
  • 2 Tbsp olive oil
  • Juice of 2 lemons
  • 2 tsp lemon zest
  • 4 cloves garlic, minced
  • 2 Tbsp fresh thyme and fresh rosemary
  • Salt and black pepper, to taste

Instructions
 

  • Make the Marinade: Whisk olive oil, lemon juice, garlic, fresh herbs, salt, and pepper in a small bowl until combined.
  • Marinate the Chicken: Place the chicken thighs in a shallow dish or plastic bag and pour most of the marinade over them, reserving some for grilling later. Marinate in the fridge for 30 minutes to 2 hours.
  • Preheat the Grill: Heat your grill or grill pan over medium heat and brush it lightly with oil to prevent sticking.
  • Grill the Chicken: Cook the chicken for 5-6 minutes on each side, or until the internal temperature reaches 165°F. Brush with reserved marinade during the last few minutes for extra flavor.
  • Rest and Serve: Let the chicken rest for 5 minutes before serving to lock in the juices.
