Ingredients
  

  • 1 green onion, sliced
  • 2 tablespoons fat-free sour cream
  • 2 tablespoons light mayonnaise
  • 2 teaspoons capers
  • 1/4 cup sweet red pepper, chopped
  • 1/2 cup shredded carrots
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 4 hard-boiled eggs, coarsely chopped
  • 8 Bibb lettuce leaves

Instructions
 

  • In a small bowl, combine the green onion, sour cream, light mayonnaise, capers, red pepper, carrots, salt, and pepper. Mix well until the ingredients are evenly combined.
  • Gently fold in the coarsely chopped hard-boiled eggs, making sure they're coated in the creamy mixture without breaking them down too much.
