Ingredients
  

  • 2 tbsp extra-virgin olive oil, divided
  • 3/4 cup finely chopped sun-dried tomatoes in oil
  • 4 cloves garlic, finely chopped
  • 1 tbsp fresh thyme
  • 1/2 tsp crushed red pepper flakes
  • 1 (17-oz) package gnocchi
  • 1 1/4 cups low-sodium chicken or vegetable broth
  • 1/2 cup heavy cream
  • 1/2 cup shredded Parmesan
  • 2 tbsp fresh torn basil

Instructions
 

  • In a large skillet over medium heat, heat 1 tablespoon of olive oil. Add the sun-dried tomatoes and cook, stirring occasionally, until they start to brown slightly, about 2–3 minutes.
  • Add the garlic, thyme, and crushed red pepper flakes. Cook for 1–2 minutes, stirring often, until fragrant.
  • Move the tomato mixture to the edges of the skillet. Add the remaining tablespoon of olive oil to the center and toss in the gnocchi to coat. Let the gnocchi cook undisturbed for 2 minutes to develop a slight golden crust.
  • Stir in the broth and cream, combining with the tomato mixture. Bring to a simmer and cook, stirring occasionally, for 4–5 minutes until the gnocchi is tender and the sauce has slightly thickened.
  • Stir in the Parmesan cheese until melted and creamy. Finish by topping with fresh basil and serve immediately.

Notes

Leftovers stay fresh for up to 4 days in an airtight container in the fridge. Reheat gently over low heat, adding a splash of cream if needed.
