Ingredients
  

  • 3 pounds sweet potatoes, about 5 large or 6 medium, peeled and cut into 1-inch cubes
  • 4 tablespoons unsalted butter, cut into pats, plus more for serving
  • ½ cup milk, warmed
  • ¼ cup maple syrup
  • 1 teaspoon sea salt, plus more for cooking the potatoes
  • Freshly ground black pepper
  • Fresh thyme leaves, optional, for garnish

Instructions
 

  • Place the sweet potatoes in a large pot and cover with cold water to about 1 inch above the potatoes. Stir in 1 tablespoon of sea salt.
  • Bring the water to a boil over high heat, then reduce heat to maintain a gentle boil. Cook for 10 to 15 minutes, or until the potatoes are fork-tender.
  • Drain the sweet potatoes and return them to the pot. Let sit for 1-2 minutes to allow excess moisture to evaporate.
  • Add the butter, warmed milk, maple syrup, sea salt, and several grinds of black pepper to the pot.
  • Use a potato masher to mash the sweet potatoes until smooth and well combined. Adjust seasoning to taste.
  • Transfer to a serving bowl, and optionally, top with a pat of butter and a sprinkling of fresh thyme leaves. Serve warm and enjoy!
