Start by chopping the onion, sweet potatoes, and carrots into bite-sized pieces.
Heat 2 tablespoons of avocado oil over medium-high heat in a large skillet or pot.
Add the onion, garlic, sweet potatoes, and carrots. Stir to coat them with the oil.
Chop the broccoli and add it to the skillet along with half the spices and sea salt. Stir well.
Next, chop the zucchini and stir them into the skillet with the other vegetables. Cover and cook for 5 minutes.
Uncover, stir, and cook for an additional 3 minutes, adjusting for doneness as desired.
In a second large pot, heat the remaining 1 tablespoon of avocado oil over medium-high heat.
Add the chicken along with the remaining spices and sea salt. Allow it to brown without stirring for 3 minutes.
Stir the chicken, cover, and cook for about 8 minutes or until fully cooked through.
Once done, remove the lid and drain any liquid.
Portion chicken and vegetables into 5 to 7 meal prep containers. Seal tightly and refrigerate for up to 8 days.
