Equipment

  • Microwave-safe mug
  • Fork

Ingredients

  • ½ ripe banana, mashed
  • 1 large egg
  • 45 ml (3 tbsp) oats
  • 30 ml (2 tbsp) whole wheat flour
  • 60 ml (¼ cup) milk
  • 15 ml (1 tbsp) maple syrup
  • 2.5 ml (½ tsp) vanilla extract
  • 1 ml (¼ tsp) baking powder
  • Toppings of choice (e.g., walnuts, chia seeds, cinnamon, dark chocolate chips, frozen fruit)

Instructions

  • In a microwave-safe mug, mash the banana with a fork until smooth.
  • Crack the egg into the mug and whisk it together with the mashed banana until well combined.
  • Add the oats, whole wheat flour, milk, maple syrup, vanilla extract, and baking powder. Mix thoroughly until a smooth batter forms.
  • If desired, fold in or sprinkle toppings like nuts, seeds, or chocolate chips on top for added texture and flavor.
  • Microwave on high for 2-3 minutes, keeping a close eye to prevent overflowing. The mug cake is ready when the center is set and slightly springy to the touch.
  • Let it cool for 1-2 minutes and enjoy it straight from the mug!

Notes

For dietary adjustments, replace whole wheat flour with almond flour for gluten-free, and substitute the egg with a flaxseed egg (1 tbsp ground flaxseed + 2.5 tbsp water) for vegan-friendly results.
