Moist and Easy Healthy Carrot Muffins Recipe

These healthy carrot muffins are naturally sweetened, packed with fiber, and moist, combining wholesome oats, shredded carrots, and dates. Perfect for breakfast, snacks, or a guilt-free treat!

Ingredients
  

  • 2 cups rolled oats
  • 8 medjool dates pits removed
  • 1/2 cup olive oil
  • 1/4 cup real maple syrup
  • 3–4 carrots peeled and shredded (about 2 cups total)
  • 2 eggs
  • 1 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1 Pinch of salt
  • Walnuts or raisins optional

Instructions
 

  • Preheat your oven to 350°F (175°C) and prepare a muffin tin by greasing it lightly or lining it with baking cups.
  • Shred your carrots using a box grater or a food processor. Aim for fine shreds to ensure even mixing.
  • In a blender or food processor, combine the oats, medjool dates, olive oil, maple syrup, eggs, baking soda, cinnamon, and a pinch of salt. Blend until a chunky batter forms. Avoid over-blending; you want some texture!
  • Fold the shredded carrots into the batter gently. If adding walnuts or raisins, stir them in at this stage.
  • Scoop the batter evenly into the prepared muffin tin, filling each cup about 3/4 full.
  • Bake for 15–18 minutes, or until the tops spring back lightly when touched and a toothpick inserted into the center comes out clean.
  • Let the muffins cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely.
  • Enjoy your muffins warm or store them in an airtight container for up to 5 days. They also freeze beautifully for quick meals!

Notes

Optional toppings include shredded coconut, crushed nuts, or a pinch of cinnamon. For vegan substitutions, replace eggs with flax eggs (2 tablespoons ground flaxseed + 6 tablespoons water).
