No-Bake Greek Yogurt Tart

This no-bake Greek yogurt tart is a delightful treat combining creamy Greek yogurt with a nutritious nut and date crust, topped with fresh fruit for a healthy dessert that impresses everyone.

Ingredients
  

  • 15 pitted Medjool dates (about 230g), soaked in warm water for 10 minutes*
  • 3/4 cup (100g) unsalted cashews*
  • 3/4 cup (100g) unsalted almonds
  • 1 cup (250g) Greek yogurt (plain or any flavor)
  • Assorted sliced fresh fruit
  • 2 tablespoons apricot preserves mixed with 1 tablespoon water (optional topping)

Instructions
 

  • Spray the bottom of a 9-inch tart pan, cake pan, or pie dish with nonstick spray. Line it with parchment paper for easy removal.
  • Soak the dates in warm water for 10 minutes. Drain and cut them in half.
  • Using a food processor, pulse the dates, cashews, and almonds until a sticky dough forms. It should hold together when pressed.
  • Press the crust mixture evenly into the prepared pan, covering the bottom and partially up the sides.
  • Spread the Greek yogurt over the crust, ensuring an even layer.
  • Top with your favorite fresh fruits, artistically arranged for presentation.
  • (Optional) Mix apricot preserves with water and brush over the fruit for a glossy finish.
  • Serve immediately or refrigerate for up to one day. Store leftovers in the fridge for up to three days.
