Ingredients
  

  • 2 ½ cups quick-cooking oats
  • cup peanut butter * (see notes below for nut-free option)
  • ½ cup natural jelly or fruit spread
  • 2 tablespoons chia seeds
  • Optional add-ins (½ cup) mini chocolate chips, chopped nuts or seeds, or coconut flakes

Instructions
 

  • In a mixing bowl, combine the oats, peanut butter, jelly, and chia seeds.
  • Stir until the ingredients are well incorporated and the dough holds together when pressed.
  • Using a 2-tablespoon cookie scoop, portion out the dough and roll it into balls.
  • Place each ball on a baking sheet lined with parchment paper as you go.
  • Repeat until all the dough is used. You should have approximately 24 balls.
  • Transfer the balls to an airtight container and store them in the refrigerator for up to 7 days or freeze for up to 3 months.

Notes

Use a drizzly natural peanut butter for easier mixing. If your peanut butter is too thick, microwave it for 20-30 seconds. To make this recipe nut-free, replace peanut butter with sunflower seed butter or roasted seed butter.
