Optional add-ins (½ cup)mini chocolate chips, chopped nuts or seeds, or coconut flakes
Instructions
In a mixing bowl, combine the oats, peanut butter, jelly, and chia seeds.
Stir until the ingredients are well incorporated and the dough holds together when pressed.
Using a 2-tablespoon cookie scoop, portion out the dough and roll it into balls.
Place each ball on a baking sheet lined with parchment paper as you go.
Repeat until all the dough is used. You should have approximately 24 balls.
Transfer the balls to an airtight container and store them in the refrigerator for up to 7 days or freeze for up to 3 months.
Notes
Use a drizzly natural peanut butter for easier mixing. If your peanut butter is too thick, microwave it for 20-30 seconds. To make this recipe nut-free, replace peanut butter with sunflower seed butter or roasted seed butter.
