Ingredients

  • 1 ½ cups old-fashioned rolled oats
  • 1 cup cashew butter
  • 2 scoops vanilla protein powder or cake batter protein powder (50–60 grams)
  • ¼ cup maple syrup
  • ½ teaspoon vanilla extract
  • ½ teaspoon almond extract
  • ¼ teaspoon salt
  • ¼ cup sprinkles of choice

Instructions

  • Add the oats, cashew butter, protein powder, maple syrup, vanilla extract, almond extract, and salt to a large bowl. Stir well until a thick dough forms.
  • Fold in the sprinkles gently to keep their colors vibrant.
  • Scoop out dough and roll into 24 bite-sized balls using your hands.
  • Chill for 15–20 minutes to set if desired, or enjoy immediately!

Notes

Use runny cashew butter: Smooth, drippy nut butter mixes better and helps the dough bind. If the dough looks dry: Add a tablespoon of almond milk at a time until it comes together smoothly. Want cleaner hands? Chill the dough for 15 minutes before rolling to minimize stickiness.
