No-Bake Strawberry Protein Balls

Ingredients
  

  • ¾ cup oat flour
  • ½ cup cashew butter
  • ½ cup crushed freeze-dried strawberries
  • cup (45g) vanilla plant-based protein powder
  • 3–4 Tablespoons unsweetened almond milk or ¼ cup full-fat Greek yogurt
  • 3 Tablespoons maple syrup
  • ½ teaspoon almond extract (optional)
  • ½ teaspoon vanilla extract
  • Pinch sea salt
  • ¼ cup white chocolate chips or 2oz white chocolate bar
  • 1 teaspoon coconut oil
  • Crushed freeze-dried strawberries for topping (optional)

Instructions
 

  • Pulse the freeze-dried strawberries in a blender or food processor until they break into crumbles. Avoid pulverizing into fine powder—small pieces work best. Set half aside for topping, if desired.
  • In a large mixing bowl, combine oat flour, cashew butter, crushed strawberries, protein powder, almond milk (starting with 3 Tablespoons), maple syrup, almond extract (if using), vanilla extract, and sea salt. Stir until a thick dough forms. Add more almond milk as needed if the mixture seems dry.
  • Scoop about 1 Tablespoon of dough per ball and roll between your hands to form even balls. Arrange on a parchment-lined tray.
  • Place the tray in the freezer for 15–20 minutes to firm up.
  • Meanwhile, melt white chocolate and coconut oil together in short microwave intervals (20–30 seconds), stirring until smooth. If desired, mix in almond extract for extra flavor.
  • Drizzle the melted chocolate over the chilled protein balls. Sprinkle with the reserved crushed freeze-dried strawberries while the chocolate is still wet.
  • Refrigerate or freeze until the chocolate sets. Serve immediately or store as described below.

Notes

Optional recipe variations: For vegan options, swap Greek yogurt with plant-based yogurt. For keto, replace oat flour with almond flour and use unsweetened chocolate.
