Ingredients
  

  • 2 eggs
  • 3/4 cup butter room temperature
  • 1/2 teaspoon vanilla
  • 1 box Devil's Food cake mix
  • 8 oz cream cheese
  • 1/2 cup butter
  • 1 tsp vanilla
  • 2 cups powdered sugar

Instructions
 

  • Beat the cookie ingredients (eggs, butter, vanilla, and cake mix) together with an electric mixer until fully combined.
  • Preheat your oven to 350°F (175°C).
  • Roll the dough into small balls, about 1–2 tablespoons each. If the dough feels too soft to roll, chill it in the refrigerator for 30 minutes.
  • Place the dough balls on a baking sheet lined with parchment paper, spacing them an inch apart.
  • Bake for 8 minutes. You'll know they're ready when the edges are set but the centers still look slightly soft.
  • Remove from the oven and allow the cookies to cool completely on a wire rack.
  • While the cookies cool, prepare the frosting by beating the cream cheese, butter, vanilla, and powdered sugar together until smooth and fluffy.
  • Fill a pastry bag or a zip-top bag with the frosting (cutting off the tip of the bag for easy piping). Pipe a swirl of frosting onto the flat side of one cookie, then gently press another cookie on top to form a sandwich.
  • Store the cookies in the refrigerator (or on your cold porch if you live somewhere chilly). Enjoy!

Notes

Chill the dough if it's too soft to handle, and avoid overbaking to maintain chewy centers. Store in the fridge for best freshness.
