- 1 lb ground turkey (or chicken)
- 1 Tablespoon olive oil
- 1 small yellow onion, diced
- 3 cloves garlic, minced
- 1 Tablespoon dried Italian seasoning
- 1 teaspoon dried parsley
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 medium zucchini, chopped small (1 ½ cups)
- 1 medium yellow squash, chopped small (1 ½ cups)
- 1 red bell pepper, chopped small
- 2 cups eggplant, chopped
- 1 14.5 oz can diced tomatoes or fire-roasted tomatoes
- 1 Tablespoon tomato paste
- 1 teaspoon balsamic vinegar
- 1/2 cup fresh basil, chopped
- 1/4 cup freshly grated parmesan or dairy-free cheese (optional)
Heat olive oil in a large skillet over medium heat. Add onion and garlic, cooking 4–5 minutes until fragrant and softened.
Add the ground turkey, breaking it apart with a spoon as it cooks. Season with Italian seasoning, parsley, salt, and pepper. Cook until browned and fully cooked.
Stir in zucchini, yellow squash, bell pepper, and eggplant. Cook for 4–5 minutes, stirring occasionally, until veggies begin to soften.
Add the diced tomatoes, tomato paste, and balsamic vinegar. Stir and let simmer uncovered for 5–10 minutes until the sauce thickens slightly.
Top with fresh basil and parmesan if using. Serve warm and enjoy!
