Orange Yogurt Parfait

Ingredients
  

  • 3 mandarin oranges
  • 1 cup plain Greek yogurt or non-dairy yogurt of choice
  • 1 tsp pure maple syrup or to taste
  • 1/4 cup granola or finely chopped pecans

Instructions
 

  • Peel one mandarin orange and separate its segments. Chop the segments into bite-sized pieces and set them aside.
  • Slice the remaining 2 mandarins in half lengthwise and juice them using a citrus juicer. This should yield about 1/4 cup of fresh juice.
  • In a medium bowl, whisk together the fresh mandarin juice, Greek yogurt, and maple syrup until smooth.
  • Stir in the granola or pecans to add a delightful crunch to the creamy mixture.
  • Divide the yogurt mixture into two small bowls or parfait glasses for serving.
  • Top each serving with the reserved mandarin pieces. For extra flavor, grate some fresh orange zest on top.
  • Enjoy immediately or refrigerate for up to an hour before serving for a chilled treat.
