- 3 mandarin oranges
- 1 cup plain Greek yogurt or non-dairy yogurt of choice
- 1 tsp pure maple syrup or to taste
- 1/4 cup granola or finely chopped pecans
Peel one mandarin orange and separate its segments. Chop the segments into bite-sized pieces and set them aside.
Slice the remaining 2 mandarins in half lengthwise and juice them using a citrus juicer. This should yield about 1/4 cup of fresh juice.
In a medium bowl, whisk together the fresh mandarin juice, Greek yogurt, and maple syrup until smooth.
