Ingredients
  

  • 3 medium zucchini ends trimmed and sliced into 8 sticks each
  • 1 tablespoon olive oil
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon dried oregano or Italian seasoning
  • ½ teaspoon sea salt
  • ¼ teaspoon black pepper
  • Optional toppings Freshly grated parmesan, lemon zest, red pepper flakes, or flaky sea salt

Instructions
 

  • Preheat your oven to 425°F and line a large baking sheet with parchment paper to prevent sticking.
  • Halve each zucchini lengthwise, then halve each piece again to create quarters. Finally, slice quarters crosswise into sticks, about 8 per zucchini.
  • In a large bowl, combine the zucchini sticks, olive oil, garlic powder, onion powder, oregano, salt, and pepper. Toss until well coated.
  • Arrange the seasoned zucchini on the baking sheet in a single layer, cut side down for optimal browning.
  • Bake for 20–25 minutes, flipping halfway through, until the edges are a rich golden-brown hue and the centers are tender.
  • Before serving, sprinkle with optional toppings like parmesan or lemon zest for extra flavor.

Notes

Want to switch things up? Use avocado oil instead of olive oil for a higher smoke point, or swap oregano for smoked paprika for a bold twist.
