  • ½ cup old-fashioned rolled oats
  • ¾ cup unsweetened almond or cashew milk
  • 1 scoop vanilla protein powder
  • ¼ cup grated zucchini
  • ½ teaspoon cinnamon
  • ¼ teaspoon vanilla
  • ½–1 tablespoon maple syrup (optional)
  • 1 tablespoon chopped walnuts

Instructions
 

  • Combine the ingredients: Place oats, almond milk, protein powder, grated zucchini, cinnamon, vanilla, and maple syrup (if using) in a container. Mix well until thoroughly combined.
  • Refrigerate overnight: Seal the container with a lid and let it chill in the fridge for at least two hours or overnight. This allows the oats to soak and soften.
  • Serve and garnish: In the morning, give the oats a good stir. If they seem too thick, add a splash of milk to loosen the texture. Sprinkle with chopped walnuts for a satisfying crunch, and enjoy cold!
