- 1 cup non-dairy milk of choice
- 1 mashed banana
- 1/2 cup almond flour
- 1/3 cup unsweetened coconut flakes
- 3 tablespoons ground flaxseed
- 2 scoops Vital Proteins Mocha Collagen Creamer (or desired collagen)
In a small saucepan, combine all the ingredients over medium heat.
Stir consistently to ensure everything is well combined while the pudding warms up. You’ll notice it starting to thicken slightly after a couple of minutes.
Allow the pudding to simmer gently for 2 additional minutes, stirring occasionally so it doesn’t stick to the pan.
Remove from heat, pour into two serving bowls, and let it cool slightly. Top with your choice of nuts, seeds, or additional coconut flakes, and enjoy!
