This Paleo banana pudding is a creamy and nutritious start to your day, packed with wholesome ingredients. This 5-ingredient banana pudding is a gluten-free breakfast that feels indulgent yet supports your healthy lifestyle.

Ingredients
  

  • 1 cup non-dairy milk of choice
  • 1 mashed banana
  • 1/2 cup almond flour
  • 1/3 cup unsweetened coconut flakes
  • 3 tablespoons ground flaxseed
  • 2 scoops Vital Proteins Mocha Collagen Creamer (or desired collagen)

Instructions
 

  • In a small saucepan, combine all the ingredients over medium heat.
  • Stir consistently to ensure everything is well combined while the pudding warms up. You’ll notice it starting to thicken slightly after a couple of minutes.
  • Allow the pudding to simmer gently for 2 additional minutes, stirring occasionally so it doesn’t stick to the pan.
  • Remove from heat, pour into two serving bowls, and let it cool slightly. Top with your choice of nuts, seeds, or additional coconut flakes, and enjoy!
