Ingredients
  

  • 3 cups old-fashioned rolled oats (use verified gluten-free, if needed)
  • 3/4 cup natural peanut butter *
  • 1/3 cup honey or maple syrup
  • 1/2 cup mini chocolate chips (optional)
  • 2 whole eggs (or flax eggs for vegan)**
  • Optional: pinch of salt, nuts, seeds, or dried fruit

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, combine oats, peanut butter, honey or maple syrup, and eggs. *If your peanut butter is thick, heat it for 10-15 seconds to make it drizzly.
  • Line a 9×9-inch baking dish with parchment paper for easy removal.
  • Transfer the mixture to the dish, and press firmly into an even layer. Pressing well is key to binding!
  • Top with chocolate chips (if using), and press them gently into the surface.
  • Bake for 15-17 minutes, or until the edges are golden brown and the center is set. Start checking at 14 minutes.
  • Allow the pan to cool completely before cutting into squares. Use a sharp, straight knife for clean slices.
