Ingredients
  

  • 1-1/2 cups all-purpose flour
  • 1 cup sugar
  • 1 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 3/4 cup butter, softened
  • 1 large egg, room temperature
  • 1 cup mashed ripe bananas (about 2)
  • 1-3/4 cups quick-cooking oats
  • 1 cup semisweet chocolate chips
  • 1/2 cup chopped walnuts

Instructions
 

  • Preheat your oven to 375°F (190°C). Lightly grease two baking sheets or line with parchment paper.
  • In a large mixing bowl, whisk together the flour, sugar, salt, baking soda, cinnamon, and nutmeg.
  • Add the softened butter to the dry mixture, and beat using a hand mixer or stand mixer until the texture resembles coarse crumbs.
  • Mix in the egg, mashed bananas, and oats until well incorporated. The mixture will be slightly thick and sticky.
  • Gently fold in the chocolate chips and chopped walnuts.
  • Drop tablespoon-sized portions of the dough onto your prepared baking sheets, spacing them about 2 inches apart.
  • Bake for 13-15 minutes or until the cookies are golden brown. Your kitchen will smell heavenly as they bake!
  • Transfer the cookies to a wire rack and let them cool completely before storing or serving.
