Cuisine American
- 1 tablespoon cornstarch
- 1/2 cup reduced-sodium beef broth
- 1/4 cup sherry or additional beef broth
- 2 tablespoons reduced-sodium soy sauce
- 1 tablespoon brown sugar
- 1 garlic clove, minced
- 1 teaspoon minced fresh gingerroot
- 2 teaspoons canola oil, divided
- 1/2 pound beef top sirloin steak, cut into 1/4-inch-thick strips
- 2 cups fresh small broccoli florets
- 8 green onions, cut into 1-inch pieces
Prepare the sauce: In a small bowl, whisk together the cornstarch, beef broth, sherry, soy sauce, brown sugar, garlic, and ginger until smooth.
Sear the beef: Heat 1 teaspoon of oil in a large nonstick skillet over medium-high heat. Add the beef strips and stir-fry until browned, about 1-3 minutes. Remove the beef and set aside.
Cook the broccoli: Add the remaining teaspoon of oil to the skillet. Stir-fry the broccoli until crisp-tender, about 3-5 minutes. The florets should retain their vibrant green color.
Add the green onions: Toss the green onions into the skillet and sauté for 1-2 minutes until softened slightly.
Thicken the sauce: Re-whisk the sauce mixture and pour it into the skillet. Bring to a boil, stirring constantly, until the sauce thickens, about 2-3 minutes.
Combine and finish: Return the beef to the skillet and toss to coat in the sauce. Heat through for 1-2 minutes and remove from heat.
