  • 2 cups cubed cooked chicken
  • 1 can condensed cream of mushroom soup 10-1/2 ounces, undiluted
  • 1 cup pineapple tidbits
  • 2 ribs celery chopped
  • 1 tablespoon chopped green onion
  • 1 tablespoon reduced-sodium soy sauce
  • 1 can chow mein noodles 3 ounces, divided

Instructions
 

  • Preheat your oven to 350°F (175°C). This ensures the casserole bakes evenly and reaches the perfect serving temperature.
  • In a large mixing bowl, combine the cooked chicken, condensed cream of mushroom soup, pineapple tidbits, chopped celery, green onion, and soy sauce.
  • Gently fold in 1 cup of chow mein noodles, being careful not to crush them so they retain their crunch.
  • Transfer the mixture into a greased 2-quart baking dish, spreading it evenly with a spatula.
  • Sprinkle the remaining chow mein noodles over the top for a golden, crispy finish.
  • Bake uncovered in the preheated oven for 20-25 minutes, or until the casserole is bubbling and the noodles on top are lightly browned.
