Bring 2 cups of water and 1 cup uncooked quinoa to a boil in a saucepan. Reduce heat to a simmer and cook for 15 minutes or until water is absorbed. Fluff with a fork and let cool.
Cut the pineapple in half lengthwise and scoop out the flesh to create two bowls. Chop the flesh into bite-size chunks.
Heat coconut oil in a large pan over medium heat. Add onion, bell pepper, garlic, and ginger. Cook for 5 minutes, stirring often, until fragrant.
