- 1 cup raw shelled pistachios

- ½ teaspoon sea salt
- ¼ cup maple syrup (plus more for drizzling)
- 2 tablespoons olive oil
- ⅓ cup unsweetened coconut flakes
- Additional handful of chopped pistachios for topping
Preheat your oven to 350°F and line an 8-inch square pan with parchment paper.
In a food processor with the S blade attached, pulse pistachios, oats, and salt until a coarse meal forms—about 30 seconds.
With the processor running, drizzle in the maple syrup and olive oil until the mixture forms a crumbly, slightly wet dough.
Press the dough evenly into the prepared pan. Sprinkle the surface with coconut flakes and additional chopped pistachios.
Bake for 10–12 minutes, until the coconut is golden and the dough is set but still slightly soft. Avoid overbaking!
Cool completely in the pan, then use the parchment paper to lift the slab out gently.
Cut into squares with a sharp knife and drizzle with extra maple syrup for a touch of sweetness, if desired.
