Ingredients
  

  • 1 cup raw shelled pistachios
  • 1 cup rolled oats* To make these gluten-free, ensure you use Certified Gluten-Free Oats.
  • ½ teaspoon sea salt
  • ¼ cup maple syrup (plus more for drizzling)
  • 2 tablespoons olive oil
  • cup unsweetened coconut flakes
  • Additional handful of chopped pistachios for topping

Instructions
 

  • Preheat your oven to 350°F and line an 8-inch square pan with parchment paper.
  • In a food processor with the S blade attached, pulse pistachios, oats, and salt until a coarse meal forms—about 30 seconds.
  • With the processor running, drizzle in the maple syrup and olive oil until the mixture forms a crumbly, slightly wet dough.
  • Press the dough evenly into the prepared pan. Sprinkle the surface with coconut flakes and additional chopped pistachios.
  • Bake for 10–12 minutes, until the coconut is golden and the dough is set but still slightly soft. Avoid overbaking!
  • Cool completely in the pan, then use the parchment paper to lift the slab out gently.
  • Cut into squares with a sharp knife and drizzle with extra maple syrup for a touch of sweetness, if desired.
  • Store in an airtight container for up to one week.
