Potluck Banana Cake with Coffee Frosting

Ingredients
  

  • 1/2 cup butter softened
  • 1 cup sugar
  • 2 large eggs room temperature
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 1-1/2 cups mashed ripe bananas about 3 medium
  • 1 cup sour cream
  • 1/3 cup butter softened
  • 2-1/2 cups confectioners' sugar
  • 2 teaspoons instant coffee granules
  • 2 to 3 tablespoons 2% milk

Instructions
 

  • Preheat your oven to 350°F and grease a 13x9-inch baking dish.
  • In a large bowl, cream together the butter and sugar until light and fluffy.
  • Add the eggs one at a time, beating well after each addition, then mix in the vanilla extract.
  • In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add this to the creamed mixture, alternating with the mashed bananas and sour cream. Mix until just combined.
  • Pour the batter evenly into the prepared baking dish. Smooth the top with a spatula.
  • Bake for 35-40 minutes, or until a toothpick inserted in the center comes out clean. Allow the cake to cool completely on a wire rack before frosting.
  • While the cake cools, prepare the frosting: In a small bowl, beat the butter and confectioners' sugar until smooth.
  • Dissolve the instant coffee granules in milk, then add this mixture to the butter and sugar. Beat until thick and spreadable. Add more milk as needed for your desired consistency.
  • Spread the coffee frosting evenly over the cooled cake and sprinkle with additional coffee granules, if desired.
