Princess Diana Overnight Oats

Ingredients
  

  • 1 cup old-fashioned rolled oats
  • 1 cup orange juice, freshly squeezed or store-bought
  • 1 cup Greek yogurt, or dairy-free yogurt
  • 1 tablespoon honey, or maple syrup
  • 1/2 lemon, juice of
  • 1/4 teaspoon cinnamon
  • 1/2 Honeycrisp apple, grated
  • 1 cup fresh blueberries, reserve some for topping
  • 1/4 cup toasted walnuts, chopped

Instructions
 

  • Add the rolled oats and orange juice to a medium bowl or jar. Stir to combine thoroughly.
  • Cover and refrigerate overnight (or at least 4 hours) until the oats absorb the liquid and soften.
  • In the morning, mix in the Greek yogurt, honey, lemon juice, and cinnamon until well combined.
  • Fold in the grated apple and most of the blueberries, reserving some for topping.
  • Taste the mixture and add additional honey, if needed.
  • Portion into two bowls or jars and top with toasted walnuts and the reserved blueberries.
  • Enjoy immediately or store in the fridge for up to 3 days.

Notes

For a vegan option, use dairy-free yogurt and replace honey with maple syrup. Customize toppings to your preference!
