- ½ cup fresh raspberries, mashed + more for topping
- 3 tablespoons chia seeds
- ½ cup unsweetened almond milk or milk of choice
- ¼ cup plain Greek yogurt
- 1-2 teaspoons maple syrup
- 1 teaspoon lemon juice
- ½ teaspoon vanilla
- Granola for topping (optional)
In a mason jar or small bowl, combine the mashed raspberries, almond milk, Greek yogurt, chia seeds, maple syrup, lemon juice, and vanilla. Stir well to incorporate everything evenly.
Let the mixture sit for 5 minutes, then stir again to break up any clumps of chia seeds.
Cover the jar or bowl and place it in the fridge to set. Allow it to chill for at least 30 minutes or up to 12 hours. The longer it sits, the thicker the pudding will become.
